Method:

  • Take a satin ribbon of a length long enough to tie it to the wrist.
  • Give a simple knot in the center of the ribbon.
  • Pass the 2 ends of the ribbon inside the central hole of the fig, such that the knot covers the hole and the two ends of the ribbon hold the fig securely. Now apply slight pressure at the center of the fig and close the hole, so that the ribbon stays there.
  • Next, arrange the sugar-coated fennel seeds around the edges of the fig in an artistic way.
  • Using a rolling pin, press the fennel seeds lightly so that they stick to the fig.
  • Lastly, place half of a candied cherry in the center to cover the satin ribbon knot.
  • Repeat this process for the rest of the figs.

  • Once done, turn off the heat and let it sit covered for 5 minutes.

  • Start by boiling the potatoes and carrots until they’re tender. You can do this in a large pot of boiling water for about 15-20 minutes. Once they are cooked, drain the water and let them cool.
  • Once the potatoes and carrots are cool enough to handle, grate or mash them in a large mixing bowl. You can use a potato masher or a fork to do this.
  • Add the chopped onion, fresh coriander, salt, and black pepper to the potato-carrot mixture. Mix everything well.
  • In a separate bowl, beat the egg. Add the beaten egg to the potato and carrot mixture. This will help bind the patties together.
  • Mix in the bread crumbs until the mixture comes together and can be easily formed into patties. You can adjust the amount of bread crumbs if needed to achieve the right consistency.
  • Heat vegetable oil in a frying pan over medium heat. Shape the mixture into patties. You can make them as big or as small as you like.
  • Place the patties in the hot oil and cook for about 3-4 minutes on each side or until they are golden brown and crispy.
  • Once they are cooked through and have a nice golden crust, remove them from the pan and place them on a plate lined with paper towels to remove any excess oil. Serve the Potato and Carrot Patties hot.

  • 1/2 tsp cumin powder
  • 1/2 tsp chilli powder
  • 1/2 tsp black pepper powder
  • Salt to taste
  • 1 tsp lemon juice
  • 1 tbsp chopped coriander leaves
  • 4 whole wheat rotis or wraps
  • lettuce leaves

For the Paneer Sauce

  • 100 g fresh paneer
  • 1 garlic clove
  • 1 tsp lemon juice
  • Salt to taste
  • 2–3 tbsp water (as needed)

Instructions

  • Boil the soya chunks for 5–7 minutes. Drain, rinse with cold water, squeeze out the excess water, and pulse lightly in a mixer or chop into small pieces.
  • Heat oil in a pan and sauté the onions until soft. Add the grated carrot and sliced capsicum, then cook for 2–3 minutes.
  • Add chilli powder, cumin powder, coriander powder, turmeric powder, black pepper, and salt. Mix well.
  • Add the prepared soya chunks and cook for 5 minutes. Finish with lemon juice and chopped coriander leaves.
  • Blend the paneer, garlic, lemon juice, salt, and a little water until smooth and creamy. Add more water if needed to achieve a spreadable consistency.
  • Warm the whole wheat wraps on a pan. Spread the paneer sauce evenly over each wrap.
  • Arrange the lettuce leaves and cooked soya filling over the sauce. Roll the wrap tightly and toast it on a hot pan for 1–2 minutes on each side until lightly crisp.
  • Slice in half and serve warm.
