Sprouts flavoured with ginger
Ingredients
- 2 cups (1 packet of 175 gm) mixed sprouts
- 1 tsp oil
- 1½ ” piece ginger – grated length ways
- 2-3 green chillies – cut into thin long strips
- 2 tomatoes – chopped finely
- 1 capsicum – chopped into tiny pieces (diced)
- 100 gms paneer – cut into ¼” cubes
- 1 tsp dhania (coriander) powder
- ½ tsp garam masala
- ½ tsp red chilli powder
- salt to taste
- ¼ tsp amchoor
Instructions
- Wash sprouts well.
- Boil 3 cups water in a small pan. Keep the sprouts in a colander (metal strainer with big holes) & steam the sprouts by placing the colander over the pan of boiling water. Cover the colander & steam for 5-6 minutes till the sprouts turn soft. Alternately, drop the sprouts into boiling water in the pan. After the boil returns, boil for 1 minute. Strain. Leave them in the strainer.
- Heat oil in a heavy bottomed kadhai. Reduce flame. Add ginger and green chillies. Fry for ½ minute.
- Add sprouts. Stir fry for 2 minutes. Add dhania, garam masala, red chilli powder & amchoor. Add ½ tsp salt.
- Add tomatoes. Stir fry for 2 minutes.
- Add capsicum. Stir for 1 minute.
- Add paneer cubes. Stir fry for 1 minute. Add ½ tsp salt or to taste.
- Cover and cook for 5-6 minutes on low flame, stirring occasionally. Serve hot garnished with grated ginger shreds.
