Ingredients
PANCAKE BATTER (8 PANCAKES)- 1½ cups maida (plain flour) 2¼ cups milk
- 1 tsp salt, ½ tsp pepper
- ¼ tsp baking powder
- 2 small onion – cut into rings
- 1 large capsicum – halved & cut into semi circles to get thin strips
- 1 cup tinned corn kernels
- 100-200 gms pizza cheese, 2 tbsp butter
- red chilli powder or crushed red chilli flakes
Instructions
- Sift maida & salt. Mix all the other ingredients. Beat well with an eggbeater. Add enough milk to get a pouring consistency.
- Heat a small non-stick frying pan (not too hot). Smear ½ tsp oil on it in the centre. Remove from fire and pour 1/3 cup (1½ big karchi) batter.
- Tilt the pan to spread the batter to get a slightly thick pancake. Return to fire. Turn the pancake when the under-side is cooked. When the other side is cooked, remove from pan. Make 8 such pancakes.
- Cook onions in oil till light brown. Add red chillies. Add the capsicum. Cook on slow fire for ½ minute.
- Add corn. Add salt, pepper to taste. Remove from fire.
- To assemble, place a pancake on a plate. Spread some filling on it.
- Grate about ¼ of the cheese nicely on it all over.
- Place another pancake & keep aside till serving time. Make 4 such pancakes.
- Grease the pan with some butter. Cook the stuffed pancake on the pan on medium heat, pressing it with a potato masher to make the two pancakes join. Turn & make the other side crisp by putting some butter on the edges. The cheese melts and joins the two pancakes.
- Remove from pan & cut crosswise into 8 triangles. Keep aside till serving time.
- At serving time microwave for a few seconds or heat in an oven. Serve.
