Mango Quinoa Salad

This vibrant spring mango quinoa salad is filled with colors and textures. It is an easy healthy dish that it is equally delicious served warm or chilled.

Vegetarian

Ingredients

  • 2 cups quinoa — cooked
  • 1/2 cup red bell pepper
  • 1 1/2 cups black beans — drained
  • 1 cup mango — diced
  • salt and ground black pepper
  • 1/4 cup homemade vinaigrette 
  • Parsley for garnishing

Instructions

  1. Place the cooked quinoa in a large bowl and add bell pepper, black beans, mango, salt and ground black pepper.
  2. Pour the homemade vinaigrette dressing over the quinoa salad and stir to combine.
  3. Garnish with parsley before serving.
  4. This salad is good served at room temperature or chilled.
  5. Enjoy!
