Ingredients
- 2 cups quinoa — cooked
- 1/2 cup red bell pepper
- 1 1/2 cups black beans — drained
- 1 cup mango — diced
- salt and ground black pepper
- 1/4 cup homemade vinaigrette
- Parsley for garnishing
Instructions

Place the cooked quinoa in a large bowl and add bell pepper, black beans, mango, salt and ground black pepper.
