An extremely tasty spinach dish
Ingredients
SPINACH LAYER- 1kg paalak (spinach)
- ¼ tsp soda-bicarb (mitha soda)
- 1 tomato
- ¾ tsp salt, ½ tsp pepper
- 1 tsp sugar
- ½ cup milk
- 1 long (clove) – crushed
- 1 moti ellaichi (brown cardamom) crushed
- 2 fresh corn cobs or ½ tin of sweet corn (cream style)
- 2tbsp cornflour
- 2 cups milk (cold)
- ½ cube (10gms) processed cheese
- ½ tsp salt, ½ tsp white pepper
- 1 green chilli – finely chopped
- 1 onion - finely chopped
- 2 tomatoes - finely chopped
- 1 green chilli - finely chopped
- 2 flakes garlic - crushed
- ½” piece garlic - chopped
- 1tbsp maida (plain flour)
- 1 tbsp tomato ketchup
- 1 tbsp oil
- ½ cup water
- salt, pepper to taste
Instructions
- Pressure cook spinach with soda-bicarb & ¼ cup water to give one whistle. Keep on low flame for 2 minutes.
- Grind boiled spinach and a tomato in a ginger to a puree.
- Add all other ingredients of the spinach layer to spinach puree & cook on low flame till the puree turns thick and dry. Keep aside.
- Pressure cook fresh whole corns in 5-6 cups water with 1 tsp salt for about 15 minutes on slow fire after the first whistle.
- Scrape corn from cobs with a knife. (Steps 4 & 5 are not done if you are using tinned corn).
- To prepare white sauce, mix 2 tbsp cornflour with ½ cup milk.
- Boil 11/2 cups of milk in a small heavy bottomed pan. Add the dissolved cornflour, stirring continuously.
- Add cheese, salt, pepper & green chilli. Cook till the sauce coats the spoon.
- Mix boiled corn or corn from the tin with the white sauce. Keep on low flame for 2 minutes. Remove from fire.
- To prepare the tomato layer, heat oil. Add onion, chilli, garlic and ginger. Cook till onions turn light brown.
- Add maida. Cook for ½ minute.
- Add water, stirring continuously.
- Add tomatoes, salt, pepper and tomato ketchup. Cook for 4-5 minutes till thick.
- To assemble, grease a baking dish. Spread half of the spinach (½” thick layer)
- Spread half of the tomato mixture on it.
- Spread half of the corn on the tomato layer.
- Put a spinach layer again, then corn & lastly tomatoes.
- Sprinkle some bread crumbs. Grate cheese.
- Bake till golden brown. Serve hot.
