Ingredients
- 2 cups fresh corn (from 4 corn cobs)
- 2 eggs
- ¾ tsp salt, ¼ tsp pepper
- 1 tsp honey
- 2 flakes garlic, 2 tbsp finely chopped coriander
- ¾ tbsp. butter
Instructions
- Grate uncooked corn off the cob. Keep in a mixing bowl.
- Separate eggs. Beat egg whites with a pinch of small until they can stand in stiff peaks.
- Mix yolks, salt, honey, garlic and coriander into grated corn. Mix thoroughly.
- Fold corn mixture into the stiff egg whites.
- Grease a non-stick tawa with butter on low heat. Drop fritters batter from a teaspoon onto the tawa. Turn when the underside is cooked. Cook on low heat till done. Serve with tomato sauce.
