Ingredients
- 2 big boiled potatoes – grated
- 1 small round brinjal – cut into thin round slices
- 2 tsp oil
- 1 tsp tomato ketchup
- 1 small onion – finely chopped
- 1 small tomato – finely chopped
- 1 green chilli – deseeded & chopped
- 2 tbsp – finely chopped fresh coriander (hara dhania)
- 1 tsp salt
- ½ tsp pepper powder
Instructions
- Grate the boiled potatoes.
- Cut brinjals into round slices. Heat 1 tsp oil in a non-stick pan till the brinjals slices turn soft. Turn the slices while cooking, to lightly brown both the sides. Add the tomato ketchup. Stir carefully to coat the ketchup on the brinjals.
- Grease a small baking dish with very little oil. Place half of the grated potatoes in a thin layer at base. Sprinkle some salt & pepper.
- Arrange a layer of brinjal slices on the potato layer. Sprinkle some salt & pepper.
- Sprinkle most of the chopped onion, chopped tomato, green chilli & coriander on the brinjals, keeping aside a little for the top. Sprinkle some salt & pepper.
- Put a layer of grated potatoes. Sprinkle some salt & pepper. Sprinkle 1 tsp oil on it.
- Bake for 15 minutes or microvave for 5 minutes on high power.
- Garnish with some chopped onion, tomato, green chilli and coriander mixture.
